Yukon GOld Mashed Potatoes

-6-8 Large Alaska Grown Yukon Gold Potatoes: Peeled, Cubed
-1 Cup Sour Cream
-1 Stick Salted Butter
-Small Palm Full of Salt aprox 1 Tbsp, Less if you like to salt on plate
- Save Some Potato Water - Add To Desired Consistency

-Peel and cube potatoes.

-Fill large pot with room temp or cool water, place cubed potatoes into pot.

-Boil on medium high, once boiling continue at medium high for 20 minutes or until potatoes are soft and easy to pierce with a fork.

-Strain potatoes, save some potatoe water on the side.

-Whip potatoes with mixer of choice until smooth, adding in butter, salt, and sour cream. Add potatoe water back to reach desired consistency.
